We love any appetizers made with Ranch seasoning. Unfortunately, so many are high in carbs and calories that I decided to create a lighter recipe that is just as delicious. With a few simple ingredient swaps for this easy Skinny Ranch Chicken Dip, it’s now an appetizer you don’t have to feel guilty eating!

You won’t miss the traditional ingredients like sour cream because Greek yogurt gives this appetizer its creaminess.

How Do You Make Skinny Ranch Chicken Dip?

Making the Skinny Ranch Chicken Dip couldn’t be easier! Simply shred chicken with a hand mixer or two forks. Then add yogurt, cottage cheese, ranch seasoning, shredded cheese, and stir!

Pop it in the oven for 20 minutes to warm it through and you have an easy appetizer that you will enjoy eating with no guilt!

Which Type of Chicken Should You Use?

If you want to save time, I recommend using a rotisserie chicken or following my instructions for cooking frozen chicken in your Instant Pot. Did you know you can cook frozen chicken breasts in the Instant Pot in less than 25 minutes? It’s the best way to get juicy chicken in minutes with no thawing required! 

After your chicken is cooked, let it cool and simply shred the meat with two forks or a hand mixer. For this dip recipe, you will want about 2 cups of shredded chicken.

It’s so simple to make this dip recipe! Here’s how:

  • First, shred the chicken meat with either two forks or a hand mixer.
  • In a medium mixing bowl, stir together the yogurt, cottage cheese, and seasoning mix.
  • Next, add the chicken and 1 cup of shredded cheese to the yogurt mixture and stir to combine.
  • Put the mixture in a 8 X 8 baking dish, top with additional cheese, and bake in a 400-degree oven for 20 minutes, or until it is brown and bubbly on top.

What To Serve With Skinny Ranch Chicken Dip

You can serve this dip with your favorite snack items! I suggest crackers, bread, or tortilla chips. If you are aiming to keep carbs low, you can eat this dip with your favorite vegetables.

I like celery or carrot sticks with this Skinny Ranch Dip. You could also serve it with raw broccoli or cauliflower.

Ingredients

  • 1 Rotisserie chicken or 1 recipe Instant Pot Frozen Chicken Shredded, about 2 cups.
  • 1 cup nonfat Greek yogurt
  • ½ cup small curd cottage cheese
  • 1 package Ranch seasoning (1 oz)
  • 2 cups Sharp cheddar cheese shredded
  • tsp salt or to taste
  • tsp cracked pepper or to taste

Instructions

  • Preheat oven to 400°
  • Remove chicken meat from bones and shred using two forks or a hand mixer.
  • In a medium mixing bowl, stir together the yogurt, cottage cheese, and seasoning mix.
  • Add the shredded chicken and 1 cup of shredded cheese to the yogurt mixture and stir to combine.
  • Pour mixture into a lightly greased 8 X 8 baking dish and smooth down.
  • Top with additional 1 cup of shredded cheese.
  • Bake for 20 minutes or until hot and bubbly.
  • Serve warm with bread, tortilla chips, carrots or celery for dipping.
