Carrot Cupcakes {Edible Craft}

With the wonderful spring weather here in Texas, I got inspired to make an edible craft for Easter.

These carrot cupcakes are easy to make and would be cute Easter Bunny food or perfect for a garden party.

You will need:

  • Chocolate Cake Mix
  • Chocolate Frosting
  • Orange Starburst Candy
  • Mint Leaves
  • Toothpick
  • Small Terra Cotta Pots

I used silicone flower pot cupcake molds that I found at Target. Real terra-cotta pots are safe to cook in as long as they are new, scrubbed clean and unglazed. You could also place cupcakes inside of a terra-cotta pot.

Directions:

Bake cupcakes and let them cool. Shape the candy into carrot shapes.

Poke a toothpick through the top of the candy to make a hole for the mint.

Insert a piece of mint into the candy.

Scoop out the top part of the cupcake.

Add chocolate frosting.

Make the “dirt” by sprinkling the top part of the cupcake onto the frosting.

Pat it down with your finger to fit inside the pot.

Add your carrots and enjoy! Wait to add the mint until you are ready to serve the cupcakes. If you leave the mint out too long, it will wilt.

 My kids helped me make the little carrots and absolutely loved these cupcakes!

If you’re looking for the silicone flower pot molds, I found them in the Easter isle at Target. They come in a cupcake kit.

  3. Love this project! So funny: I completely overlooked the part that said,
    ” Shape the candy into carrot shapes.” I was digging around in the Easter section of Target forever last night looking for carrot starburst. (lol) Of course, it wasn’t so funny in the moment. Lesson learned…READ the thorough directions that Amy provides.

  4. i found the flower pot kit, at Target, in the back of my store…where they have a display of all Easter candy…there are about 3 rows of Easter candy and small toys…can’t wait to make mine..

  5. Where did you get the flower pots? I looked at Target and on line and I can’t find them anywhere else. I guess a lot of people have been asking Target stores because they asked if it was the same one on the blog. :)
