Dot Cake Brownies

Ingredients

  • ½ cup unsalted butter softened to room temperature
  • 3 eggs
  • 1 ¼ cup all purpose flour
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon baking soda
  • 2 ½ cups semi sweet chocolate chips

Frosting

  • 1 cup unsalted butter softened to room temperature
  • 3.5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons milk
  • 1 pinch salt
  • 2 cups Rainbow Nonpareils

Instructions

Brownies

  • Preheat oven to 350 degrees and grease a baking pan.
  • Combine butter, eggs, flour, sugar, vanilla and baking soda into a large bowl.
  • In a microwave, melt 1 cup of semi sweet chocolate chips. Cook at 30-50 seconds at a time and stir, then repeat until totally melted.
  • Stir in melted chocolate chips
  • Add remaining 1 1/2 cup of chocolate chips to batter
  • Bake 20 minutes.
  • Remove from oven to cool before frosting brownies.

Frosting

  • Place the butter in a stand mixer fitted with a paddle attachment (or use an electric hand mixer). Beat on medium-high speed for about 2-3 minutes until creamy.
  • Slowly add the powdered sugar in small batches along with the pinch of salt until mixed well.
  • Pour in the vanilla extract and milk and whip on medium-high speed for 3-4 minutes until the frosting is silky, smooth, and easily clings to a spoon.

Decorate Brownies

  • With a bent spatula or flat knife, add a thick layer of frosting over the cooled brownies.
  • Coat the entire top of frosting with sprinkles. Place a paper towel or wax paper over the sprinkles and gently press down. Add more sprinkles to entirely coat the top.
  • Place brownie pan in freezer for 20-30 minutes before cutting to ensure you get a clean cut.
