Today, I’m sharing the ultimate summer party dessert for your next get-together: Pina Colada Dip Cakes. I took a super simple, 4-ingredient tropical fruit dip and transformed it into the cutest individual desserts served in plastic wine glasses.
These desserts look like a fancy blended cocktail, but they’re actually a rich, fluffy, delicious cup cake treat. Your guests will get a total kick out of them! Add them to a table along with my Tropical Rum Punch and you’ve got a fantastic themed party!

For the 4-Ingredient Pina Colada Dip:
- 16 oz Cool Whip thawed
- 12 oz whipped cream cheese
- 3.4 oz box Vanilla instant pudding mix
- 16 oz crushed pineapple two 8 oz cans, undrained
For the Cake Glasses & Garnishes:
- 12 sponge cake dessert shells
- 1 cup sweetened shredded coconut toasted
- Maraschino cherries
- Fresh pineapple wedges
- Vanilla wafer cookies
Instructions
- In a large bowl, combine the instant vanilla pudding mix, Cool Whip, whipped cream cheese, and the crushed pineapple (with its juice). Stir everything together until it’s beautifully light, fluffy, and completely combined.
- Chill the bowl into the fridge until you’re ready to serve.
- Prep for Assembly: About 30 minutes before your guests arrive, line up your plastic wine glasses and gather your garnishes (toasted coconut, cherries, pineapple wedges, wafers, and umbrellas).
- Build the Cakes: Press one round sponge cake dessert shell into the bottom of each plastic wine glass.
