Why You’re Going to Love This Recipe

  • Completely No-Bake: Keep your kitchen cool. No ovens, no stove-tops, just pure mixing bliss.
  • Massive Wow-Factor: Serving these in plastic wine glasses with fun garnishes makes them look like you spent hours playing pastry chef, even though they come together in minutes.
  • Crowd-Friendly: This recipe makes a huge batch! I recently hosted my book club with a fun tropical theme, and these were the absolute star of the show. I paired them with a quick snack board of plantain chips, cheese, fruit, and olives, and everyone went crazy for these handheld treats.
  • Super Versatile: I used this batch to serve 12 guests, but there was so much left over I easily could have made 24 of these little dessert glasses! If you don’t want to make 24 individual cups, you can serve the leftover mix as a dip alongside fresh fruit, graham crackers, or slices of angel food cake.

Best Tips for this Recipe

How to Beat the Summer Heat:

If you are throwing an outdoor pool party or a backyard luau, stick the pina colada dip in the freezer for a few hours beforehand! You can scoop it out just like ice cream, and it will stay nice and chilled while your guests mingle in the sun.

Make-Ahead Friendly:

You can whip up the 4-ingredient dip the night before and keep it covered in the fridge. Just assemble the glasses right before the party so the sponge cakes and wafer cookies stay perfectly textured.

How to Toast Coconut Fast:

  • In the Air Fryer: Spread your shredded coconut onto parchment paper and bake on low heat for 1-2 minutes
  • In the Oven: Spread your shredded coconut on a cookie sheet. Bake at 300 degrees for about 3–5 minutes

Stir constantly until it turns a beautiful golden brown. Watch it closely, as it can burn quickly!
