While the Instant Pot is famous for savory meals, it is a secret weapon for baking, acting as a high-performance steamer that locks in moisture for a dense, silky texture. To ensure your desserts come out perfectly every time, keep these essential tips in mind before you lock the lid.
Grease Generously: Even more than in an oven, cakes can stick to the pan in a high-moisture environment. Use plenty of butter and flour, or a piece of parchment paper at the bottom of the pan for a clean release.
Always Add Water: To create the necessary steam and pressure, you must add at least one cup of water to the bottom of the inner pot before lowering your cake pan inside.
Cover with Foil: To prevent condensation from dripping onto your cake and making the top soggy, loosely cover the top of your cake pan with aluminum foil.
The Trivet is Essential: Use the steam rack (trivet) that came with your pot to keep the cake pan above the water line. If your trivet has handles, it makes lifting the hot cake out much easier.
