Bring the Magic of Greece Into Your Home with this Beautiful Vegetable Platter
Bring a bit of Greece into your home by making some Tzatziki sauce and inviting friends over for appetizers, then head to the movie together! Tzatziki works wonderful as either a low carb dip or sauce. It’s perfect drizzled over grilled chicken or served as a dip for a vegetable tray platter, olives, crackers and pita bread.
I recently made this beautiful spread for my friends and it was a huge hit. All store bought goodies but the Tzatziki sauce. So easy!! After going to Greece, I am now addicted to almond stuffed olives. If you haven’t had them, you have to try some. I’m drooling again just looking at this veggie tray photo!
How to Make Homemade Low Carb Tzatziki Sauce
You’ll need:
- ½ English cucumber, peeled and grated
- 16 oz (2 cups) cold plain Greek yogurt (I think full fat tastes best)
- 4 cloves garlic, grated
- 1/4 cup chopped fresh dill
- 1/4 cup finely chopped feta cheese
- 1½ Tablespoon fresh squeezed lemon juice (½ lemon)
- 1 tablespoon olive oil
- ½ teaspoon salt, or more to your taste
- black pepper to taste
Finely chop the dill and feta cheese then set aside in a mixing bowl.
After grating the cucumber, squeeze as much water out as you can. Use your hand, or add the cucumber to a cheesecloth and squeeze. When you are done removing as much water from the cucumber, add it to the bowl.
Grate the garlic and then mix all ingredients together.
You can serve it right away with a vegetable tray or chill overnight. Garnish with olives and a sprig of dill.
I hope you enjoy this simple Tzatziki dip and vegetable platter recipe!
