Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • cup diced onions
  • 1 /3 cup diced celery
  • cup diced cooked ham
  • ¼ teaspoon brown sugar
  • teaspoon cayenne pepper
  • 2 15.5 oz cans Jalapeño Black-Eye Peas drained
  • ½ cup chicken broth
  • salt and cracked pepper to taste
  • 2 cups white rice cooked

Instructions

  • Sauté onions, celery, diced ham, brown sugar and cayenne pepper in pan for about 1-2 min.
    1 tablespoon butter, 1 tablespoon olive oil, 1/3 cup diced onions, 1 /3 cup diced celery, 1/3 cup diced cooked ham, 1/4 teaspoon brown sugar, 1/8 teaspoon cayenne pepper
  • Add black-eyed peas and chicken broth.
    2 15.5 oz cans Jalapeño Black-Eye Peas, 1/2 cup chicken broth
  • Bring to boil and simmer for 10-15 minutes.
  • Add salt and cracked pepper to taste.

    2 cups white rice

Notes

How to make a vegetarian black eye peas and rice recipe: Omit the ham and replace the chicken broth with vegetable broth.
For even more flavor – Add a few pinches of smoked paprika and garlic salt.
