Easy BLT Wraps with Homemade Guacamole

These tasty BLT wraps are perfect for a busy weeknight dinner or quick lunch.  Enjoy this easy homemade guacamole recipe and bacon, lettuce and tomato wrap recipe.

Dinner doesn’t have to be super fancy and wraps are always a favorite in my family. I’m happy to have Divian Connor, our amazing contributor, back with another quick and easy recipe idea!

We have had numerous wraps for lunch lately, as I am always stocked with flour tortillas. Seriously, you can make any sandwich combination and use a tortilla. I was hankering for a BLT sandwich, but my kids had used the last of the loaf of bread the day before on peanut butter sandwiches… but hey, I had flour tortillas, avocados and lemons. I decided to give it a go and really, this BLT wrap was so yummy! And bonus, my kids loved it.

Quick and Easy Homemade Guacamole

I have a new-found love of avocado and each time I head to the grocery store, I am buying four or five at a time. I love the creaminess of avocados. They are just so refreshing!

For the easy chunky homemade guacamole, I used one avocado, the juice from one lemon, two tablespoons of sour cream and a little salt and pepper to taste.

Using a spoon, mash and mix everything together. I like mine chunky, and really, the avocado is so creamy, the chunks melt in your mouth.

How to make BLT Wraps

For the wrap, cook a few slices of bacon and cut into chunks or crumble. Slice fresh tomato and cut up a bit of lettuce. I love lettuce with color and texture, so I purchased a small package called Artisan Lettuce I got at the grocery.

Simply layer your guacamole on your flour tortilla, then add lettuce, tomato and bacon pieces. Wrap by taking one side of the wrap and tucking it under the ingredients and roll.

Ingredients

  • 4 slices bacon, crumbled
  • 1 tomato, sliced
  • 1 cup lettuce
  • 4 flour tortillas

Homemade Guacamole

  • 1 avocado
  • 2 tablespoons sour cream
  • 1 lemon
  • teaspoon salt
  • 1 pinch black pepper

Instructions

Guacamole

  • Use a spoon to scoop out the avocado into a medium bowl. Then add the juice from a lemon, sour cream, salt and pepper. Mash and mix with a fork, set aside.
  • Cook a few slices of bacon and cut into chunks or crumble.
  • Slice a fresh tomato and cut up a bit of lettuce.
  • Layer the guacamole on your flour tortilla, then add lettuce, tomato and bacon pieces.
  • Wrap by taking one side of the wrap and tucking it under the ingredients and roll.
