When I suggested this Summer Pool Float Cookie idea to Jill, our fun food contributor here at Living Locurto, I had no idea she would make two versions. A large rainbow pool float cookie and little cookies with Mini Teddy Grahams!

How to make Rainbow Pool Float Cookies
Whether you are hosting a summer pool party or just need a new idea for some cute and easy cookies to make, you’ll love these Rainbow Pool Float Cookies and Mini Life Preserver Cookies! Get two sizes of cookies in one recipe, make one or both.
You will need:
- Pre-Made Sugar Cookie Dough
- Food Coloring (we use gel)
- Mini Teddy Grahams
- Chocolate Cookie Icing
- Black Sprinkles
Start out by separating the cookie dough into 4 small bowls. Then add different food coloring to each bowl of cookie dough.
Roll out each colored dough & cut out a circle using a cookie cutter. You can also use a glass for this if you do not have a circle cookie cutter.
Cut your circle into slices using a pizza cutter. Kids will have fun doing this part!
Cut out the middle using a small circle cutter or you can use a frosting tip like we did.
Pull up your slices using a knife & place on a cookie sheet.
Rotate the colors and the cookies will look like this…
Also rotate the middle cut out pieces and bake them as well. These will be the cookie that you use for the cute Teddy Graham Floats.
Cut out the middle of these mini cookies just like you did the larger version. After the small cookies are baked you want to cut off the legs from the teddy graham using a knife.
To make the bear’s sunglasses, squeeze a thin line of chocolate cookie icing over the eyes and then place on the black sprinkles. If you do not have black sprinkles just spread out the cookie icing around the eyes to look like sunglasses.

Yes, if you cut off the bottom of the bear, he sits inside the cookie. We made these after my pool party. I would serve them on a blue platter or blue paper to look like pool water. You could even cut the paper in a shape of a pool. That would be fun!
I don’t see where you used the mini cookies. They aren’t pictured anywhere. And does the bear just sit in the center without tipping over?
