Mini BBQ Beef Pies

I really don’t know what my deal is? I’ve always liked to cook a little, but now I’ve become addicted with creating new recipes, cooking and baking. I think the food blog bug bit me or something! When I visited my mom’s last week, I had to go grocery shopping so I could bake something even though her fridge was full. It’s like I just had to do it. I am hooked!

I wanted to share a recipe I came up with last night. (yes, I cooked late last night and blogged about it- what’s wrong with me?? LOL!)  This recipe is nothing fancy, but sure is good and something I can see serving at football parties this fall.

Mini BBQ Beef Pies

  • 1 lb. Ground Beef
  • 1 small onion diced
  • 1-2 cups of BBQ Sauce (use as much as you like)
  • 1/2 of a large red pepper diced
  • 1/2 cup of chopped sweet potatoes (I used canned)
  • 1 ear of corn
  • 2 1/4 cups of Bisquick
  • 2/3 cup of Milk
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 450°
  2. Add beef and onion to skillet and cook until done.
  3. Lower heat to simmer and mix in BBQ sauce, red pepper, sweet potato.
  4. Cut the corn off the ear of corn and add that to the mix.
  5. Mix Bisquick and milk in a bowl.
  6. Drop a spoonful of dough into a muffin tin. Repeat until you’ve used all the dough.
  7. Bake biscuits for about 2 minutes, then take out of oven and add a large spoonful of the meat mixture to each muffin tin on top of the biscuit dough. Press the spoon down making a little cup for the mix.
  8. Sprinkle cheese on top and bake for another 8-10 minutes.

I had some leftover meat mixture so I found a box of cornbread in the pantry and make a pie! I like the biscuits the best. For the pie, I just poured the cornbread over the top of the meat and baked.

I used Country Bob’s Sauce. The folks at Country Bob’s sent me a bunch of sauce to test out and it’s really yummy. Sweet and tangy with a little spice. I’ve been using it on all sorts of things lately.

    I have never seen Country Bob’s Sauce~but perhaps that is because I have never noticed it before. You know how it is~when you get a green volkswagon, even though you swear you’ve never seen one before, it seems like every second car is now a green volkswagon!

    oh, yum! i’m back at school on the east coast, and i’m already missing real barbecue! because as everybody knows, only barbecue with beef is the real stuff. and country bobs looks like a delicious compliment to the meat.

    Mmmmm, these look great! I can’t wait to try it out on my kids. I like the idea of using a muffin pan to make them as well, there is something appealing to mini bites! Never tried Country Bob’s but something tells me I’ll like it :)
