Valentines Day is a perfect time to bake something sweet. I’m thrilled that Divan Conner will be contributing more recipes this year. She is sharing her mom’s special sugar cookie recipe today! I can’t wait to make them. Enjoy! ~ Amy

 

Growing up, my mother always made a full course dinner every day and she baked once a week. Throughout the year we were treated with homemade cakes, pies and brownies. Even though my mom baked all year, it was the holidays that I especially looked forward to.

During Christmas, my mother would spend exactly one week after Thanksgiving making sugar cookies. She gave them out to friends, family and my dad’s colleagues.  Always in the kitchen with her, us kids got the cookies that did not make the cut and that made us happy.

When my father passed away in 1998, my mother stopped making the cookies. It was not until 10 years later that I walked in her kitchen during the holidays of 2008 to find her and my children busy making her signature sugar cookies.

I was happy she had found her drive to bake them again and even more floored when she passed the recipe on to me.

Why is it that we sometimes think things may be harder than what they are? I have already made a batch of dough for weekend baking!

After making the dough and rolling into balls, use a the bottom of a glass coated with oil and dipped into sugar to flattened the dough.

Soft Sugar Cookies
 
Ingredients
  • Soft Sugar Cookies
  • 1 cup butter (softened)
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup of sifted powdered sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 4½ cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cream of tartar
Instructions
  1. In large mixing bowl, mix all dry ingredients.
  2. In another bowl, combine the wet ingredients and butter.
  3. Whisk gently to mix and slowly begin adding in the flour/sugar mixture.
  4. Mix gently with large spoon or spatula until a dough is formed. Dough will not be absolutely hard, it should be fairly soft.
  5. Form dough into a ball and place into the refrigerator until ready for use.
  6. To bake, preheat oven at 325 degrees.
  7. Pinch off dough to form 1 inch balls.
  8. Place the balls on a cookie sheet with about an inch and a half of space between them.
  9. Use a glass to coated with leftover oil and dipped into sugar to flattened each ball.
  10. Bake for 6-12 minutes until edges are slightly golden.
  11. You can bake longer for a firmer cookie.
