I love anything lemon and these cute Baby Chick Lemon Pies are the perfect dessert recipe for spring!

I have a fond memory from childhood of being put inside of a pen full of baby chickens. Cute and soft little yellow baby chicks hopping all around me! Ever since then, I’ve had a love of chickens. I even had a pet chicken named Chicken Little when I was in grade school. Ha!

When Jill showed me this fun food recipe idea she made for us, I couldn’t have been more smitten. Two of my favorite things! Learn how to make an easy lemon pie that you can decorate into these sweet baby chicks in minutes. Such a cute and yummy treat that both kids and adults will love!

Cook in the microwave on full power for one minute intervals, stirring after each minute. You will know the lemon curd is done cooking when it coats the back of a metal spoon. Remove from the microwave, push through a fine, mesh sieve and pour into a bowl.

Spoon the lemon curd into your prepared tart cups.  Let them cool. Place out the sprinkles on a work surface.

Place the yellow ice cream sprinkles on the sides for the wings. Cut the tips off of 2 ice cream sprinkles and place them on to for hair. Add two candy eyes, a carrot sprinkle for the nose, and orange flower sprinkles for the feet.

Save any remaining lemon curd in a jar for later use. Happy Spring!!

Ingredients

  • 6 frozen mini pie shells
  • 1 cup white sugar
  • 3 eggs
  • 1 cup fresh lemon juice
  • zest of 2 lemons
  • ½ cup butter melted
  • candy eyes
  • yellow ice cream candy sprinkles
  • orange flower sprinkles
  • carrot sprinkles

Instructions

Pie Crust

  • Place your frozen mini tart shells on a baking pan
  • Poke holes in the tarts using a fork. Place them in the oven and bake according to the package directions.

Lemon Curd

  • Place the sugar, eggs, lemon juice, lemon zest and butter into a glass bowl. Whisk until smooth.
  • Cook in the lemon mixture in the microwave on full power for one minute intervals, stirring after each minute. You will know the lemon curd is done cooking when it coats the back of a metal spoon.
