It’s time to start preparing Thanksgiving dinner and I’ve got food on the brain, so I thought I would share some yummy recipes. I have no idea why I’m already thinking about left-overs? I guess I’m just in a planning mood. Wow, this doesn’t happen very often… I’d better go clean out my closets while I’m at it!

This Honey Lime Enchiladas recipe is by my fantastic friend Cheryl aka Tidymom. I came across them and thought they would be the perfect recipe for left-over Thanksgiving turkey! Be sure to bookmark or print this recipe to save for this weekend:-) See the original Honey Lime Enchilada post with printable recipe here.

While you’re there, check out Tidymom’s Whisky Pumpkin Shortbread Parfait!!

Here is my usual turkey left-over casserol recipe. It’s always a big hit.

I’m drooling over The Pioneer Woman’s Turkey Pot Pie too!

What do you make with left-over Thanksgiving turkey?

  1. Have you seen the recipe in the newspaper coupon section that uses all the Thanksgiving leftovers….turkey, mashed potatoes, dressing, cranberries and all. It looks fun.

  2. I look forward to turkey leftovers more than turkey in its original state, which I find kinda lackluster and dry most of the time. My family’s leftovers are very similar to yours–essentially turkey chilaquiles. SO GOOD! Thanks for sharing these yumtastic recipes.

  3. Sandwiches, of course! I love the cranberry sauce on the cold turkey, on the leftover dinner roll! Mmmm. Although, I have some leftover roast chicken in the fridge…that honey lime enchilada recipe might be dinner TONIGHT!

  4. I featured Turkey Enchiladas Verde on my blog last week — they are amazing for Turkey leftovers!
