Chicken & Salmon: Weekly Dinner Plan – Week 8

As you can probably imagine, these meal plans are time consuming for me on top of all other things that I do. But I was so encouraged by your great comments last week! Thanks for those, I don’t get a lot of comments on my blog, so I’m never sure if people like something or not?? LOL! Glad to hear many of you like my meal plans best, so you’ll be seeing more for sure!

All recipes below are by Twitter, blog and real life friends. I’m excited to try some new recipes! Please email me if you have a dinner recipe you’d like me to feature. I’d love to get more ideas from my readers and be able to link to you too:-)

Here is what’s for dinner this week…


Grilled Basil & Lemon Salmon with Tomatoes & Asparagus

Rotisserie Chicken with Grilled Corn on the Cob & Sweet Potatoes

Lentil Brown Rice Casserole

Garden Fresh Panini with Leftover Roasted Chicken

Creamy Italian Crock-Pot Chicken

MONDAY

Grilled Basil & Lemon Salmon with Tomatoes & Asparagus

Recipe by my friend in real life Cate. Thanks Cate!

  • Butter substitute like I Can’t Believe It’s Not Butter or 1/2 stick softened butter
  • 1 bunch of fresh basil, finely chopped
  • 1-2 lemons, sliced
  • 3-4 Roma Tomatoes, diced
  • Fresh Asparagus
  • Salmon Fillets – if you have a large slab of Salmon, slice it into portions as they will be served
  • Salt
  • Fresh Ground Pepper
  • Foil

Directions

  1. Mix the chopped basil into the softened butter and set aside
  2. Lay out foil for each serving of Salmon you plan to make – foil should be about 12-15 inches in length
  3. Place salmon in the center of the foil
  4. Put about a tablespoon of the basil butter mixture on top of salmon and press down slightly with a spoon along the top of the salmon sprinkle with pepper
  5. Place 2-3 lemon slices on top of butter mixture
  6. Add 3 asparagus stems to the packet (rub butter mixture on top of asparagus for extra taste)
  7. Sprinkle about 3 tablespoons of the diced Roma Tomatoes on top of lemon layer
  8. Salt to taste and grind fresh pepper on top
  9. Pull top and bottom of foil up and roll down until it seals in the center. Fold over the sides several time toward the center to seal and form the foil packet.
  10. Place on medium heat grill for 10-12 minutes (in oven cook 10-12 minutes at 375°)
  11. Open steaming packets carefully and enjoy!

Sides: Salad or brown rice.

**My new fast rice option is Minute Rice Ready to Serve Brown Rice. I open several packs and cook in a microwave safe glass dish for 2-3 minutes. It’s really good!

TUESDAY

Rotisserie Chicken with Grilled Corn on the Cob & Sweet Potatoes

I’m taking it easy tonight!

  • Store bought Rotisserie Chicken
  • Corn on the cob cooked on the grill (Want to know how to do this? Click here.)
  • Baked Sweet Potatoes- cook in microwave for 5-8 minutes.

WEDNESDAY

Lentil Brown Rice Casserole

I’m trying something different with this one!

The original recipe comes from RecipeZaar. But this is how she did it:

  • 3 cups chicken broth
  • 3/4 cup lentils
  • 1/2 cup brown rice
  • 3/4 cup chopped onion
  • 1 cup of chopped green pepper
  • 1/2 grated carrot
  • 1 teaspoon Italian seasoning
  • 1/2 tsp garlic powder
  • Dash pepper
  • 1 cup grated cheddar cheese

Directions

  1. Mix everything together in 9×13 dish except for cheese.
  2. Cover in aluminum foil and bake at 300 degrees for about 1 hour.
  3. Remove foil and add cheese. Throw back in oven until cheese is melted.

Serve with salad. Total Cost of Meal: $1.75 Price Per Serving: .22 cents

THURSDAY

Garden Fresh Panini with Leftover Roasted Chicken

  • Rustic White Bread
  • Roasted Chicken (left over from Tuesday’s chicken)
  • Balsamic Vinegar
  • Olive Oil
  • Garden Fresh Tomatoes
  • Garden Fresh Basil
  • Fresh Mozzarella
  • Asparagus (you should have some from Monday’s meal) or fresh fruit for side dish

Directions

  1. Slice bread into pieces a half an inch thick.
  2. Place two slices of mozzarella on one piece of bread. Top with chicken, tomatoes, and basil – as much or little as you like of each.
  3. Drizzle with balsamic vinegar and olive oil, about a 1/2 tsp of each per sandwich.
  4. Top with two more pieces of cheese and the final piece of bread.
  5. Grill using a panini press until bread is golden and cheese is melted. (I have a George Foreman Grill I use for this-Amy)

Katie’s Tip: If you don’t have a panini press, there are many other ways you can achieve similar results. Additionally, you can use sun dried tomatoes as a substitution for fresh. This is a great meal on a hot day with something cold to drink and fresh fruit or veggies on the side.

Amy’s Tip: Asparagus can be made in the oven or microwave- I like to drizzle it with olive oil, salt and pepper and just pop in the microwave for a minute or two.

FRIDAY

Creamy Italian Crock-Pot Chicken

Recipe by Angie at The Arthur Clan (she says all of her kids love this!)

  • 4 boneless, skinless chicken breasts
  • 1 envelope Italian salad dressing
  • 1/4 cup water
  • 1 pkg. (8 oz.) cream cheese
  • 1 can condensed cream of chicken soup
  • (optional) 1 can (4 oz.) mushroom stems and pieces (drained)
  • hot cooked noodles or rice

Directions

  1. Cut the chicken into medium sized chunks and place in slow cooker.
  2. Combine salad dressing mix and water – pour over chicken.  Cover and cook on low for 3 hours.
  3. In a small mixing bowl, beat cream cheese and soup until blended.
  4. If you like mushrooms – Stir them into mix now.
  5. Pour mix over chicken.
  6. Cook 1 hour longer or until juices run clear.
  7. Serve over rice or noodles.

Weekend is leftovers!

    I like your meal plans! I did the first one – some of them anyway – & they were good. I’m looking forward to trying most of these as well! It’s just hard for me to go out & buy all this stuff at once (I need to use what I already have) so I try one or two new recipes when I can. Can’t wait to try the salmon & the panini!
