Weekly Meal Plan – Week 3

Jazzed Up Mac & Cheese
Barbecue Chicken Pizza
Cheesy Twice Baked Potato with Hamburger
Grilled Chicken, Rice & Veggies
Sausage Potato Soup

Monday

Jazzed Up Mac & Cheese

  • Macaroni & Cheese (boxed or homemade)
  • Hamburger Meat (Ground Turkey Optional)
  • Tomatoes (optional)
  • Breadcrumbs

Directions:

  1. Cook Mac & Cheese on stove
  2. While Mac & Cheese is cooking, cook hamburger meat in skillet. (save a bowl for Wed’s meal)
  3. Stir in hamburger to Mac & Cheese
  4. Divide macaroni mixture into small bowls or put all in one large glass baking dish.
  5. Top with a tomato slices and sprinkle with breadcrumbs.
  6. Bake at 350° until bubbling, about 10-15 minutes.

Serve with Broccoli

Sneaky Chef Idea: Add pureed white beans for a healthier meal.

Tuesday

Barbecue Chicken Pizza

Directions

  1. Saute or grill chicken. ( I like to buy chicken already cooked at the grocery store’s deli.)
  2. Top your favorite pizza crust with BBQ sauce, chicken, cilantro and gouda and mozzarella cheese.
  3. Cook as directed for your crust.

Picky kids get their own cheese pizza!

Wednesday

Cheesy Twice Baked Potatoes with Hamburger

  • 2-4 Large Russet Potatoes
  • Hamburger Meat (Saved from Monday’s Meal)
  • Shredded Cheddar Cheese
  • Butter & Milk
  • Sour Cream & Chives (Optional)

Directions:

  1. Turn oven to broil
  2. Slice potatoes in half long wise and cook in microwave 6-7 minutes or until fully cooked.
  3. Scrape the inside out of the potato
  4. Mix in a bowl: potato, meat, cheese, a small amount of butter, milk and sour cream, chives, salt & pepper.
  5. Place mixture back into the potato shells.
  6. Bake in oven until crispy and brown on top about 10 minutes.

Serve with Salad or Vegetable of Choice

Thursday

Grilled Chicken, Rice & Veggies

No special recipe needed. Use your favorite marinade. I plan to use my grill pan. After I grill the chicken I lightly coat zucchini and squash with olive oil, salt and pepper and grill in the chicken pan.

Friday

Sausage Potato Soup

5-6 medium sized potatoes, cut into 1″ cubes
1 lb. bulk pork sausage
1 medium onion, chopped
1 cup light cream
1/4 cup butter
6 cups chicken stock
1 1/2 Tbsp. vanilla extract
2 Tbsp. balsamic vinegar
freshly ground black pepper

Bring chicken stock to a boil in a large pan. Add potatoes and onions. Cook until potatoes are tender. Meanwhile, brown sausage in a separate pan. Add the cooked sausage to the potatoes and stock. Add the cream and butter. Stir until butter is melted. Add the vanilla and balsamic vinegar right before serving.

Serve with Bread
This recipe is so good! You’ll be munching on it for a few days:-)

    Hey Amy!
    I love the mac and cheese thing; kinda like what i make except i brown my ground meat; drain it; and throw a jar of ragu in; simmer while i am making the mac and cheese dinner; combine and simmer about 10 minutes! have also put a can of ranch style beans in and someone tried a can of corn. tops of about 30 minutes to prepare this!

    I made the sausage potato soup but added carrots and prochini mushrooms. Then blended the soup and finally added the chunks of turkey sausage..it was divine.
