Swiss and ham overnight breakfast strata is an easy make ahead breakfast casserole recipe. Ham, cheese and spinach are irresistible! A simple breakfast for brunch, holidays and celebrations.
In a medium mixing bowl, combine the two cheeses and set aside.
Heat a large skillet over medium heat and add butter and onions. Sauté until onions soften and become translucent.
Add the cubed ham, frozen spinach, salt, and pepper. Stir to combine and remove from heat.
Grease a 3 quart baking dish with butter and spread one third of the bread on the bottom.
Add about a third of the ham mixture to the top of the bread cubes. Sprinkle a third of the cheese over the ham. Repeat the layers two more times.
In a large mixing bowl, whisk together eggs, milk, mustard, and salt and pepper to taste.
Pour the egg mixture over the strata.
At this point, you can cover the dish with plastic wrap and keep in the refrigerator overnight. When ready to bake the strata, preheat the oven to 375°F. Bake, uncovered, for 40-50 minutes or until golden brown and cooked through.
