Strawberry Cashew Oatmeal Bars with Cinnamon Toast Crunch cereal. Easy homemade recipe with whole grain. Perfect snack or breakfast bar with fresh strawberries.
In a mixing bowl, combine the oats, flour, Cinnamon Toast Crunch, cashews, brown sugar, honey and salt. Add melted butter and stir until crumbly.
Scoop out about 1 cup of the mixture and set aside to use as your crumble topping.
Line the bottom of an 8x8 inch pan with parchment paper. Leave some paper around the edges so you can easily remove the bars. Spray with cooking spray, then put the remaining mixture into the pan and spread out evenly.
For the filling, toss the strawberries, vanilla extract, lemon juice and sugar in a bowl.
Layer the strawberries evenly over the crust.
Sprinkle the remaining crumble mixture over the strawberries.
Bake for 45-50 minutes or until the strawberries are bubbling and the topping is golden brown. Let cool before removing the bars from the pan.
Remove the strawberry cashew oatmeal bars from pan, sprinkle with some extra Cinnamon Toast Crunch, cut and serve!
Notes
To speed up cooling process, put your pan in the refrigerator after removing from the oven.Drizzle with glaze if wanting a sweeter bar:Vanilla Sugar Glaze (optional) 1/2 cup powdered sugar 1/2 teaspoon pure vanilla extract 1-2 tablespoons milkMake the vanilla sugar glaze by whisking powdered sugar, vanilla and milk together in a large glass measuring cup or bowl.
