Strawberry Cereal Bars
With summer camps, family vacations and beach or pool visits, your summer was probably jam packed. This Strawberry Cashew Oatmeal Bar recipe is an easy homemade treat for a snack or on-the-go breakfast with fresh picked strawberries.
One of my family’s favorite cereals is Cinnamon Toast Crunch. Made with whole grain wheat as the first ingredient and real cinnamon, it’s not only a wonderful pantry staple, but a perfect addition to recipes!
I struggle to get my kids to eat healthy, but I always feel good knowing they are eating wholesome ingredients when I see them making a bowl of Cinnamon Toast Crunch!
Along with our favorite cereal, we’ve been eating a lot of cashews because they are packed with the vitamins and nutrients essential to good health.
I wanted to make a skinny homemade bar with fresh strawberries that I could not only snack on during the day, but hopefully get my kids to eat something good for them this summer!

These tasty Strawberry Cashew Oatmeal Bars are packed full of “good for you” ingredients, fresh strawberries and so easy to make! Make them for breakfast, school lunches or for a grab and go treat.
I’m happy to announce that my son, the pickiest of all eaters, actually ate these bars!!! He never eats anything with fruit. I really think the Cinnamon Toast Crunch was my secret ingredient to get him to eat them. Yay for cereal, the perfect summertime solution!
How Do You Make Strawberry Breakfast Bars?
My daughter and I had a blast making these tasty strawberry cashew oatmeal bars. She kept eating the topping before we could sprinkle it on top of the bars! Just watch how easy they are to make in the video below!
Crust:
- 1 cup whole grain old-fashioned rolled oats
- 1 cup white whole wheat flour
- 1/2 cup Cinnamon Toast Crunch, crushed
- 1/3 cup cashews, chopped
- 1/4 cup light brown sugar
- 1/3 cup organic honey
- 1/8 teaspoon salt (omit if using salted cashews)
- 6 tablespoons unsalted butter, melted
Strawberry Filling:
- 3 cups diced strawberries
- 1 teaspoon of vanilla extract
- 1 tablespoon fresh lemon juice
- 1 tablespoon granulated sugar
Strawberry Oatmeal Bars Directions
1. Preheat oven to 350 degrees. Then in a mixing bowl, combine the oats, flour, Cinnamon Toast Crunch, cashews, brown sugar, honey and salt. Add melted butter and stir until crumbly.
2. Scoop out about 1 cup of the mixture and set aside to use as your crumble topping.
3. Line the bottom of an 8×8 inch pan with parchment paper. Leave some paper around the edges so you can easily remove the bars. Spray with cooking spray, then put the remaining mixture into the pan and spread out evenly.
4. For the filling, toss the strawberries, vanilla extract, lemon juice and sugar in a bowl. Layer the strawberries evenly over the crust.
5. Sprinkle the remaining crumble mixture over the strawberries.
6. Bake for 45-50 minutes or until the strawberries are bubbling and the topping is golden brown.
Let cool before removing the bars from the pan.

Strawberry Cashew Oatmeal Bars
Ingredients
Crust

Notes
1/2 cup powdered sugar
1/2 teaspoon pure vanilla extract
1-2 tablespoons milk Make the vanilla sugar glaze by whisking powdered sugar, vanilla and milk together in a large glass measuring cup or bowl. Wow, wow and one more time wow! This is such a simple and insanely delicious recipe of pastry. I love strawberries, I eat them fresh, dried, baked all year round, and I even made salted pizza with the addition of strawberries as a piquant accent. All in all, this is one of my favorite berries.
