Cut off the top of the pineapple, keeping the leafy crown intact.
Turn the pineapple top upside down so the leaves resemble the branches of a Christmas tree.
To make sure the tree stays standing upright, you can cut some of the outside of the pineapple to use as a base. Just use toothpicks or kabob picks to form a base with pieces of pineapple to keep the Christmas tree steady on your platter.
Cut Out the Star:
Using the cut portion of the pineapple, slice a thick piece of fruit and use a star-shaped cookie cutter (or a knife) to cut out a star.
Attach the star to the top of your pineapple tree with a toothpick for that classic Christmas look.
