Easy peanut butter chicken recipe with Thai peanut sauce served over rice and with a side of broccoli. This one pan chicken is a sweet and spicy easy dinner you can cook in less than 30 minutes!
Heat sesame oil in a skillet or wok over high heat.
Cook and stir chicken, garlic, and ginger in hot oil until chicken is lightly browned, about 5 minutes.
Reduce to medium heat, add peanut butter, coconut milk, and soy sauce.
Squeeze the juice from the clementine, then add black and red pepper. Save the clementine peel for zest garish.
Continue to cook, stirring until chicken is fully cooked. About another 5 minutes.
Service chicken over rice.
Garnish with clementine zest and parsley.
Notes
This dish pairs wonderfully with steamed broccoli. If your family is fond of vegetables, consider cooking the broccoli directly in the pan with the sauce. Simply add broccoli florets when you include the sauce, and they'll soak up the delicious flavors as they steam.Adjust the Sauce: If you prefer extra sauce to drizzle over your rice and chicken, feel free to add more coconut milk until you achieve your desired consistency.
