A savory Microwave Egg and Bagel Breakfast Sandwich is perfect for busy mornings. A quick and easy high-protein breakfast recipe made in the microwave in less than 3 minutes!
Spray a microwave-safe ramekin with extra virgin olive oil. This adds healthy fats and keeps the egg from sticking.
Crack in your egg and whisk in the plain Greek yogurt until smooth.
Stir in everything bagel seasoning, shredded cheese, and a pinch of dried parsley.
Cook in the microwave for 40 seconds (timing may vary slightly depending on your microwave). The eggs should be fluffy and set.
Toast your bagel if desired. Then build your sandwich by layering in the cooked egg and any extras you love—cream cheese, avocado slices or bacon are all great additions.
