Preheat your oven to 350°F (175°C). Spray a 2-inch round baking pan with cooking spray to ensure the cookie cake doesn’t stick.
Fill the Pan:
Press the gingerbread cookie dough evenly into the pan, smoothing it out. Before baking, press a generous handful of red and green M&M candies into the dough for a festive touch.
Bake the Cookie Cake:
Place the baking pan in the oven and bake for 8-10 minutes, or until the cookie cake is fully baked and set. It should be slightly golden on the edges.
Cool the Cake:
Remove the pan from the oven and allow the cookie cake to cool completely in the pan. Once cooled, turn the pan upside down over a cake stand or serving platter and gently tap to release the cookie cake. The bottom of the cookie cake will now be the top for a perfectly flat surface.
Decorate the Christmas Tree:
Create the Tree: Gently press green M&Ms into the center of the cookie cake in the shape of a Christmas tree. Use red M&Ms at the base of the tree to complete the look.
Frost the Edge: Fill a piping bag with buttercream frosting and pipe a decorative border around the outer edge of the cookie cake.
Add Sprinkles: While the frosting is still soft, top it with colorful holiday sprinkles for extra cheer. Tip: If any sprinkles fall off the frosting, use a spoon to gently push them back into place to keep the edges clean and neat.
