Instructions
Prep the Popcorn: Pop your kettle corn according to the package directions. Spread it out evenly in a very large bowl or a metal casserole dish sprayed with non-stick cooking spray.
Make the Toffee: In a saucepan over high heat, combine the butter, brown sugar, and corn syrup. Stir constantly until the mixture reaches a boil.
The "No-Stir" Step: Once it boils, reduce the heat to medium and let it bubble without stirring for five minutes.
Coat: Turn off the heat and immediately pour the hot toffee over the popcorn. Stir quickly to coat every kernel before the toffee begins to harden.
Toast the Coconut: Spread your coconut in an oven-safe dish. Place it under the broiler for just a minute or two until golden brown. Watch it closely—it burns fast! Sprinkle the toasted coconut over the warm popcorn.
The Drizzle: Melt your chocolate chips and use a spoon or piping bag to drizzle it generously over the popcorn.
The Finishing Touch: Once the chocolate has set, break the popcorn into chunks and toss in your chopped Samoa cookies.
