Turn your Instant Pot on sauté and while waiting for it to heat and the "hot" button to show, brush the chicken breasts on both sides with olive oil and sprinkle with salt and pepper.
Place chicken in the Instant Pot and sauté on each side for 2-3 minutes until golden brown.
When chicken is golden brown on both sides, remove from Instant Pot.
Add 1 tablespoon of olive oil and the minced garlic, oregano and thyme. Sauté and stir for 1 minute.
Add wine and broth, then squeeze the juice from the lemon and stir.
Place chicken back into Instant Pot, lock the lid, make sure the steam valve is closed. Push the poultry button and set it to cook for 15 minutes.
When done, release the pressure, then remove your Instant Pot lid. Let stand for 2-3 minutes.
Serve this Instant Pot lemon garlic chicken with a salad, rice or your favorite pasta. Toss pasta with butter and spoon the juices from the wine, broth and chicken over the pasta.
Notes
If you don't want to add wine to your chicken, you can replace it with white wine vinegar or extra chicken broth.
