Easy Sausage  Potato Soup

This easy sausage potato soup recipe is a lighter version of traditional potato soup and pure comfort food!

What you’ll need: – chicken stock – Yukon Gold potatoes – onion – pork sausage – light cream – butter – vanilla extract – balsamic vinegar – salt and pepper

– In a large pot, bring the chicken stock to a boil. – Add potatoes and onions. Stir occasionally, until potatoes and onions are tender, about 20-25 minutes.

– In a separate pan, brown the sausage. When cooked add to the potato soup. – Add the cream and butter, stirring until butter is melted.

– Stir in the vanilla and balsamic vinegar before serving. – Add black pepper to taste and garnish with chives.
