Unicorn White Chocolate Toffee
Ingredients
- 48 Saltine Crackers
- 1 cup Butter
- 1 cup Light Brown Sugar packed
- 2 cup White Chocolate Chips or Vanilla Melting Chocolate
- Pastel Rainbow Candy Sprinkles
Instructions
- Preheat oven to 400°F. Line a rimmed baking sheet with foil and saltine crackers.
- In a medium pot, melt butter and brown sugar over low heat. Once the butter is melted, turn the heat up to medium-high and stir constantly until it turns into a thick, bubbly syrup.
- Remove from heat and pour over saltine crackers. Use a spatula to spread the mixture and to evenly coat the crackers.
- Bake for 5-6 minutes, then remove baking sheet from oven.
- Place the white chocolate in a glass bowl and heat in the microwave for 30-60 seconds until melted. Pour melted white chocolate over the top. Use a spatula to spread it evenly over the toffee.
- Top with rainbow sprinkles or colorful chocolate candy.
- Place baking sheet in refrigerator or freezer for 20 minutes to allow the toffee and chocolate to harden. Once it is completely hard, remove and cut into small pieces to enjoy.

Yes, store at room temperature. They will be good for 7-9 days, but really won’t last that long because we eat them all quickly! LOL
How long do these last? Do I keep them in an airtight container at room temp?
Thanks for sharing! How far ahead of time can I make it?
This looks so good! What a fun treat to make for a girls birthday party!
I’m quite certain this lives up to its name. We always have desserts in the office. I can’t wait to make this unicorn crack and bring some to work (if my family doesn’t eat all of it first!)
