Flavorful Taco Potato Skins
It’s Super Bowl Party time and I’m loving these Taco Potato Skins that Divian has made for us today! Whether you love a good football party or wanting to add a new appetizer recipe to your list, these tasty potato skins sure to be a hit!
Every year my mother hosts a Super Bowl Party and I am in charge of getting all the food ready. I love trying to think of different types of appetizer recipes to serve because I want people to try things they may have otherwise not thought of or eaten before.
When I was thinking of this year’s menu, of course, I thought, chicken wings…oh the endless possibilities with the sauce. I thought pizza, and I thought sliders. Then I thought…hmmm, most everyone I know loves potato skins. What do you get when you pair your typical cheesy potato skins with taco meat and red cabbage? Taco Potato Skins… pure goodness!

The red cabbage on these taco potato skins add an amazing crunch, and you do not have to worry about soggy lettuce throughout the party.
How to Make Taco Potato Skins
These Taco Potato Skin appetizers are super easy to make, crunchy and so delicious. I hope you enjoy this recipe!
You will need:
- 6 medium potatoes
- 2 lbs of ground beef
- 1 cup of shredded cheese
- Sour Cream
- 1 packet of taco seasoning
- Shredded Red Cabbage or Lettuce
- Diced tomato (optional)
- Diced Chiles
- Jalapeno slices (optional)
- Cilantro (optional)
Directions
Rinse and clean your potatoes, then bake at 350 degrees for 60 minutes. You can also microwave your potatoes for about 12 minutes. If microwaving, keep an eye out by checking them to make sure the outside is not getting rubbery.
Once potatoes are done and tender, slice them each in half. Using a spoon, begin scooping out the insides of the potatoes until there is just a thin layer of the insides left. Save your potatoes that you scoop out, they are perfect for mashed potatoes!
I make a line around the inside of the potato and then scoop from the sides. It makes it easier.
Brown your ground beef and drain any grease. Sprinkle your taco seasoning and mix well into the browned beef.
Turn off heat and begin placing a tablespoon of the beef mixture into the hollowed potato skins.
Sprinkle with shredded cheese and bake at 350 degrees until cheese is melted. Place your skins on your serving tray and top with shredded lettuce or red cabbage, dice tomato, and a dollop of sour cream.
These are Perfect Super Bowl appetizers that your guests are sure to love!

I love the look and ingredients! Never thought of cabbage for crunch! 🙂 I use a grapefruit spoon as it’s serrated on the edges and it seems to be perfect for scooping out the potato..just an idea.:) thanks for the great stuff you always put out…you are a blessing to me!
