We had such a great summer in Scotland. You might have seen some of our adventures on Instagram. It’s hard to believe I have one child who started middle school and another in high school! It seems like yesterday they were just starting kindergarten.

After dropping off my son for his first year of high school I flashed forward in my mind to dropping him off at college. Eeek! I’m so not ready for them to grow up. The next photo was taken during our incredible trip to Scotland. They are my world and I just love them to pieces!

I want to enjoy as much time I can with my kids, so I’m excited to start back to a routine of cooking family dinners. We traveled and ate out pretty much all summer, so it’s taking me a while to get back into meal planning.

With my daughter on a new all-star competitive cheer team, life starting to get very busy! The first thing I thought to do was get out my Instant Pot to make dinners easier. I tried making Instant Pot Lemon Garlic Chicken and the recipe was a huge hit with even my super picky son!

These sweet 11 year olds have been neighbors and close friends since they were three years old! I’m excited after all of these years of going to the same school, they finally have classes together. You’d think her mom and I would talk about what is happening in school with them, but no… all we can discuss is how much our Instant Pot has changed our lives. NO JOKE! ha! We love coming up with new Instant Pot recipe ideas and I can’t wait to share more ideas on the blog!

How to make Instant Pot Lemon Garlic Chicken

What you’ll need:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt and fresh ground pepper
  • 3 tablespoons minced garlic (about 8 cloves) This sounds like a lot, but it’s not a strong garlic taste at all.
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh minced thyme
  • 1 large lemon
  • 1/4 cup white wine

What is a good substitute for white wine in cooking?

If you don’t want to add wine to your chicken, you can replace it with white wine vinegar or extra chicken broth.

 

Directions for cooking Lemon Garlic Chicken in your Instant Pot

 

  • Turn your Instant Pot on sauté and while waiting for it to heat and the “hot” button to show, brush both sides of the chicken breasts with olive oil and sprinkle with salt and pepper.
  • Place the chicken in the Instant Pot and sauté on each side for 2-3 minutes until golden brown. This will seal in the juices and keep it tender!
  • When the chicken is golden brown on both sides, remove from Instant Pot.

  • Add olive oil, minced garlic, oregano and thyme. Sauté and stir for 1 minute.
  • Add wine and broth, then squeeze the juice from the lemon and stir.
  • Place the chicken back into the Instant Pot, lock the lid, make sure the steam valve is closed. Push the poultry button and set it to cook for 15 minutes.
  • When done, release the pressure then remove your Instant Pot lid. Let stand for 2-3 minutes.
  • Serve this Instant Pot lemon garlic chicken with a salad, rice or your favorite pasta.

I like to toss pasta in butter and spoon the juices from wine, broth and chicken over the pasta.

  1. This is one of my family’s favorite recipes! We add up to 3 containers of whole fresh mushrooms and some small halved potatoes for a complete meal. The kids prefer me to sub more water for the wine. We also find that skipping the sauté step still yields chicken we’re happy with. Thank you!

  3. You cook it directly in the liquid inside of the pot that comes with the pressure cooker. I use a trivet when I insert an additional bowl – the handles of the trivet make it easy to pull out the bowl. Good luck!

Just got my Instant Pot this week and am loving it, but having never cooked with pressure cookers before (or regular pots, for that matter!! lol) , I’m wondering do you cook the chicken directly in the broth/wine, or put it on a trivet above the liquid? Thanks for what sounds like a delicious recipe!!!
