With spring right around the corner, it’s the perfect time to bring out the lemons. I found a great recipe for Meyer Lemon Curd at The Pastry Affair. Unfortunately, I couldn’t find meyer lemons locally so I just used regular lemons. The curd still turned out great.

If you’ve never had lemon curd before, you are missing out! Our family’s favorite way to eat it is to add a spoonful to vanilla yogurt- best lemon yogurt ever. Other recipes that you can add lemon curd to:

  • crepes
  • cupcake filling
  • thumbprint cookies
  • scones

So get cracking and make that lemon curd. It’s soooo good and pretty too!

To make a little treat for friends, teachers or just because, I put the lemon curd in a small mason jar.

I attached a Happy Spring card with some yellow striped twine from the Twinery. (Ribbon would be cute too)
