I’m always up for trying new cake flavors. When I saw these Corona Cupcakes, I had to recreate them!

Earlier this week I shared simple tips for a stress free dinner party and one of them was to have a conversation piece. I’m thinking these fun cupcakes would do the trick for Cinco de Mayo and summer parties!

How to Store Cupcakes:

Short-Term Storage (1-2 Days): Place cupcakes in an airtight container and keep them in a cool, dry place away from sunlight.

Long-Term Storage (Up to 3 Months – Freezing)

  1. Place cupcakes on a baking sheet and freeze uncovered for 1-2 hours until the frosting hardens.
  2. Once firm, wrap each cupcake in plastic wrap and store them in a freezer-safe container.
  3. To thaw, remove the cupcakes from the freezer and let them sit at room temperature for 1-2 hours before serving.

Corona Cupcakes with Lime Frosting

Ingredients

For the Cupcakes:

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup Corona beer room temperature
  • 2 tbsp lime juice
  • Zest of 1 lime

For the Frosting:

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tbsp lime juice
  • Zest of 1 lime
  • 1-2 tbsp heavy cream or milk if needed for consistency

For Garnish:

  • Lime wedges
  • Coarse sugar or sea salt optional, for a margarita-style rim

Instructions

Make the Cupcakes

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large bowl, beat butter and sugar together until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  • Add half of the dry ingredients to the butter mixture and mix just until combined.
  • Pour in the Corona beer, lime juice, and lime zest, then mix. Add remaining dry ingredients and mix until just combined (don’t overmix!).
  • Divide batter evenly into cupcake liners, filling about ¾ full.
  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cupcakes cool completely before frosting.

Make the Frosting

  • Beat butter until smooth and creamy.
  • Gradually add powdered sugar, mixing well after each addition.
  • Add lime juice and lime zest. Mix until smooth.
  • If the frosting is too thick, add heavy cream or milk 1 tablespoon at a time until desired consistency is reached.

Decorate the Cupcakes

  • Pipe or spread frosting onto cooled cupcakes.
  • If desired, dip the edges of the frosting in coarse sugar or sea salt for a fun margarita-like touch.
  • Garnish with a small lime wedge on top.
