How to Store Cupcakes:
Short-Term Storage (1-2 Days): Place cupcakes in an airtight container and keep them in a cool, dry place away from sunlight.
Long-Term Storage (Up to 3 Months – Freezing)
- Place cupcakes on a baking sheet and freeze uncovered for 1-2 hours until the frosting hardens.
- Once firm, wrap each cupcake in plastic wrap and store them in a freezer-safe container.
- To thaw, remove the cupcakes from the freezer and let them sit at room temperature for 1-2 hours before serving.

Corona Cupcakes with Lime Frosting
Ingredients
For the Cupcakes:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup Corona beer room temperature
- 2 tbsp lime juice
- Zest of 1 lime
For the Frosting:
- ½ cup unsalted butter softened
- 2 cups powdered sugar
- 1 tbsp lime juice
- Zest of 1 lime
- 1-2 tbsp heavy cream or milk if needed for consistency
For Garnish:
- Lime wedges
- Coarse sugar or sea salt optional, for a margarita-style rim
Instructions
Make the Cupcakes
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Add half of the dry ingredients to the butter mixture and mix just until combined.
- Pour in the Corona beer, lime juice, and lime zest, then mix. Add remaining dry ingredients and mix until just combined (don’t overmix!).
- Divide batter evenly into cupcake liners, filling about ¾ full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cupcakes cool completely before frosting.
Make the Frosting
- Beat butter until smooth and creamy.
- Gradually add powdered sugar, mixing well after each addition.
- Add lime juice and lime zest. Mix until smooth.
- If the frosting is too thick, add heavy cream or milk 1 tablespoon at a time until desired consistency is reached.
Decorate the Cupcakes
- Pipe or spread frosting onto cooled cupcakes.
- If desired, dip the edges of the frosting in coarse sugar or sea salt for a fun margarita-like touch.
- Garnish with a small lime wedge on top.
