How to make Cherry Coke Float Cupcakes

Baking these moist and delicious Cherry Coke Float Cupcakes directly in the Coca-Cola can makes for an adorable party presentation and is way easier than you might think! The cans come out of the oven looking brand new. What a fun way to surprise your guests!

Make and decorate the cupcakes 1-2 days ahead of time and store in the refrigerator. The Coke makes the cake extra moist, so don’t worry about them drying out before it’s time to serve.

What you’ll need:

  • Devils Food Chocolate Cake Mix
  • 1/3 Vegetable Oil (or the amount called for in the mix)
  • 3 Eggs
  • Instant Chocolate Pudding (3.9 oz)
  • 8 Pack of  Small Coca Cola Cans (7.5 fl oz)
  • 1 Small Jar Maraschino Cherries
  • Vanilla Frosting (store bought or homemade)
  • Hand Can Opener
  • Cooking Spray

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix the cake mix, oil, eggs and pudding in a bowl.
  3. Gradually add 2 cans of Coke to the bowl and mix.
  4. Pour out the soda from 4-6 Coke cans. Use a can opener to cut the tops off of the can. I tried my electric can opener, but it wouldn’t work because the cans were too small. Using a hand opener worked perfect! The lid drops off easily into the can.
  5. Spray the inside of the empty Coke cans with cooking spray.
  6. *Pour the cake batter into the empty cans a little over halfway full.  (see alternative idea below if you want to skip this step.)
  7. Place Coke cans on a baking sheet and bake for 18-20 minutes or until you can put a toothpick into the cake and it comes out clean.
  8. After cupcakes cool, frost your cupcakes with the easy cherry frosting (see directions below).
  9. Finish off by adding sprinkles, a straw and a cherry on top. (cut your straw in half so you use less straws)
  10. Serve your cute cakes with a spoon.

*ALTERNATIVE IDEA:  If you don’t want to bake the cake inside the can, pour the cake batter into a regular baking pan and bake as directions require. After cake cools, cut into 3 inch long rectangles and place inside the cans. You can gently squish the cake into the can with the back of a spoon if it hangs over the edge. Frost the cake as in the directions and the presentation will still look adorable!

Makes 6-8 cupcakes. For more, double the cake batter recipe.

How to Make Easy Cherry Vanilla Frosting

Dice 8-10 maraschino cherries and add to white frosting, then pour 2 tablespoons of the cherry juice from the jar into the frosting and mix.

Easy and so tasty!

Add the frosting to a plastic bag, trim the corner with scissors and frost the cupcakes.

If you use canned frosting, make sure to refrigerate the cupcakes immediately after decorating them so the frosting will stay put when it’s time to display on the party table. I think these cupcakes made the party table!

  1. How can we make root beer cakes in a can with root beer frosting i know they make the flavor root beer just like you can vanilla flavoring but was wondering if you could help me out with the cake part

  2. Are you sure 2 cans of coke??
My cake recipe only asked for a cup of water and each can is 7.5oz.
Wish I could attach a photo of my lava coke bombs in the oven lol.
So cute and worth another try.
I will definitely need to adjust the recipe 🙂

  3. Oh no! So sorry you couldn’t get it to work. Did you see my video? We used a normal can opener and it worked great. Only a few cans got messed up in our testing. They just sort of crushed as we tried to take the top off. I’ve had several people send photos of their Coke Float Cupcakes though, so it must work for others as well as me. Maybe just not all can openers do the trick? Thanks for trying it out though!

  4. I was excited to help my son make these cupcakes for his friends but I knew we’d need to prepare the cans well in advance. I attempted to use an electric can opener, a traditional metal hand operated can opener and an OXO hand operated can opener and none of them worked. I even had my husband try with each can opener. There are no words to describe our disappointment and even fewer cupcakes to eat.

  5. This may be a stupid question, but I assume you eat the cupcakes with a fork right out of the can, yes?

  6. I am a Coke girl all the way, especially Vanilla Coke. I get a 12 pack of Vanilla Coke every year for Christmas (started off as a joke but turned into a family tradition). Loved how you made the cakes inside the actual Coke cans. Smart!

  7. Whew! I had to keep reading the directions to see if I completed it correctly. 🙂 Happy (Taco) Tuesday!!!
