Best Southern Cajun Caviar Recipe

This delicious spicy Cajun Caviar recipe comes from my friend Laura who grew up in Louisiana. I was thrilled when she shared her Aunt Cookie’s famous Cajun Caviar recipe with us. Anyone who enjoys bean dip, will love this recipe!

In the south, eating black-eyed peas on New Year’s Day is considered good luck.

Not a fan of regular black-eyed peas? Then this dip is just the thing to serve for your New Years Day brunch!

 

What is Cajun Caviar?

Cajun Caviar is a fun name given to this spicy southern snack! It’s basically vegetarian bean dip made with black-eyed peas, onions, pimentos, green peppers, Italian Dressing and balsamic vinegar.

Even though they are called peas, black-eyed peas are actually in the bean family. Once you make this recipe, you’ll have a delicious healthy gluten-free bean dip with a spicy kick. 

 

What Do You Serve with Cajun Caviar?

Laura’s Aunt Cookie served her dip with Fritos. I think the salty corn flavor makes your Cajun Caviar complete. You can also serve this dip with tortilla chips or bagel chips.

How to Make Aunt Cookie’s Cajun Caviar

This dip may not look very appetizing, but I’m not kidding, once I tasted it… I became a huge Cajun Caviar fan and had to have the recipe! 

Thanks to Laura’s Aunt Cookie for such a delicious and very easy cajun appetizer.

Ingredients

  • 1 small jar Chopped Pimientos
  • 2 cans Trappey’s Black-Eyed Peas
  • 1 bunch Green Onions, Chopped
  • 2 Green Bell Peppers, Chopped
  • 1 Large Onion, Chopped
  • 1 package Good Seasons Zesty Italian Dressing
  • 1/4 cup Balsamic Vinegar
  • 1/2 cup Vegetable Oil

Directions

  1. Combine chopped onion, peppers, green onions in large bowl.
  2. Drain black-eyed peas and pimiento and add to bowl.
  3. Make dressing according to directions.
  4. Mix all ingredients and refrigerate.

Ingredients

  • 1 jar Chopped Pimientos Small Jar
  • 2 cans Trappey's Black-Eyed Peas
  • 1 bunch Green Onions diced
  • 2 Green Bell Peppers diced
  • 1 Large Onion diced
  • 1 package Good Seasons Zesty Italian Dressing
  • ¼ cup Balsamic Vinegar
  • ½ cup Vegetable Oil

Instructions

  • Combine chopped onion, peppers, green onions in large bowl.
  • Drain black-eyed peas and pimiento and add to bowl.
  • Make dressing according to directions.
  • Mix all ingredients and refrigerate.

Notes

Best made the day before, serve with Frito Scoops for the best flavor.
Use black-eyed peas with jalapeños for an extra kick!

  4. GIRL~~~you look maaahvelous! I mean it.. oh my gosh, you should be a model! You are stinkin’ gorgeous… and I doubt that one facial could make ThAT much difference!
    Anyway…the Cajun Caviar looks so yummy.. I’ll have to try it. I do a salsa/dip with black beans, shoepeg corn, chopped tomatoes, vidalia onion, green pepper (or a can of chopped green chilis for a little more spice), fresh cilantro, fresh lime/lemon juice, chopped garlic.. and sometimes I add sliced olives or chopped avocado, too. It’s just unreal how yummy it is.. I don’t even need a scooper. I can just put some in a bowl and eat it, and I am HAPPY! Oh yum.. I think I’ll have to make that tomorrow….
