If you are like me, the day after Thanksgiving means there are plenty of leftovers. No matter how many friends and family members stop by, there is sure to be some goodies left over.
There are so many ideas and recipes for leftover Thanksgiving turkey but I have a tendency to side with the more simplistic of the options. Sandwiches!
Two years ago, I made a chipotle cranberry sauce. I am a lover of all things spicy, but the chipotle peppers, although they have a mild spicy kick to them, have a really wonderful smokey and distinct flavor.
Can you imagine the delightful combination of roasted turkey on a nice ciabatta bread with a deliciously smokey cranberry chipotle sauce with lime? Believe me, so good!
This is a great way to use leftover turkey and make sandwiches that anyone will enjoy!
Cranberry Chipotle Lime Sauce
- 1 1/3 cup of sugar
- 1 12oz package of fresh cranberries
- 2 (or more depending on the level of smokey-ness and spice you want) rinsed chipotle peppers
- Zest and juice of 1 lime
Rinse your chipotle peppers and then take a spoon to take out the seeds. Chop finely. In a pot on medium heat, combine sugar, chipotles, cranberries, lime zest and lime juice.
Once the sugar begins to dissolve, stir frequently so that your sugar does not burn. Once mixed, the cranberries will begin to burst. The sauce should begin to bubble, once it bubbles, remove from heat and stir. Let sit and it will begin to thicken.
*I love a chunky cranberry sauce, but you can take a hand blender to mix it for a ‘less chunky’ sauce.
This sauce is not only perfect for Thanksgiving dinner, it is the perfect spread on an after Thanksgiving sandwich!
With bacon, fresh kale, tomato and a great ciabatta bread, you cannot beat this sandwich.
Sweet potato chips are the perfect side to this leftover Thanksgiving turkey sandwich!
How to make Sweet Potato Chips
- Thinly slice fresh sweet potatoes.
- Sprinkle with sea salt and bake on 350 degrees until the slices begin to curl and turn brown. They will be crispy.
