Tuna Tomato Melt Casserole

Remember my story about meeting Missy Lapine, The Sneaky Chef? Here is one of my favorite recipes we made with the new UNCLE BEN’S Whole Grain White Rice. The sneaky part is that it’s full of whole grains and white bean puree that your family will never even taste. When making The Sneaky Chef recipes, I always like purees that are easy and it doesn’t get any easier than opening a can of beans! Shhhh! I’ve even started putting white bean puree in our turkey burgers (aka Krabby Patties).

Sorry, I’ve had to take a break on weekly meal plans because of my busy work load. Lots to do before school is out!! In the mean time, I’ll be posting some recipes you can print and put into a binder.

I like to sneak all kinds of things into my kids’ foods without them knowing it. I made a potato salad the other day and my husband was trying to guess the “secret” vegetable I put in there. It was funny, he thought it was something weird but it was just the normal cucumbers and celery! I guess he’s paranoid!

I love the sneakiness. I don’t like to sit down and eat a bowl of vegetables or brown rice. I am constantly incorporating them into dishes so that way I get the nutrition that I need. Thanks for sharing this recipe.
