Kid Friendly Recipes – Weekly Meal Plan

It’s our first week back to school. I’m excited to get back into a routine! What better way to start than with a weekly meal plan?

Here’s dinner this week…

MONDAY

Mini Krabby Patties (Turkey Burger)

** My son NEVER eats anything new, but he now loves these since I started calling them Krabby Patties!! Thanks Sponge Bob:-)

This recipe was inspired by Rachel Ray, find her original recipe here. I made some edits based on what my family likes best.

  • 1 package ground turkey
  • 2 rounded tablespoons horseradish
  • 2 teaspoons Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 1 tablespoon grill seasonings
  • olive oil
  • Buns, Lettuce & Tomato

Directions

  1. Heat a nonstick skillet over medium-high heat.
  2. In a medium bowl, mix together meat, horseradish, Worcestershire sauce, cheese and grill seasoning. Form 4 patties or 2 and several small ones for kids and drizzle them with olive oil. Cook the burgers for 5 to 6 minutes each side.
  3. Cut the buns with a round cookie cutter to make small buns. Add burgers to buns!

Sides: Oven Baked Fries and corn on the cob

Tuesday

Tortilla Pizzas

This week I’m going to let the kids make their own pizzas, but with whole wheat tortillas instead of pizza dough. We’ll see if they like this! ha.

  • whole wheat tortillas
  • 4 table spoons of Pizza or Marinara Sauce
  • toppings of your choice (I’m giving my kids these choices: broccoli, pineapple and mini pepperoni)
  • 1-2 cups Shredded Mozzarella Cheese
  • Handful of chopped Fresh Basil (dried Basil will do if you don’t have fresh)

Directions

Place tortilla on a baking sheet covered with foil. Add all ingredients on the tortillas to your liking, top with basil, then bake for about 10 minutes at 350° or until cheese is bubbly.

**Here is my trick… I like to chop the toppings really small, then cover them with a little more cheese, to basically hide the toppings! My kids usually eat it when they think it’s just cheese pizza:-) (well… at least ONE kid does!)

Wednesday

Chicken, Broccoli & Rice Casserole

  • 3 chicken breasts cooked in water and shredded
  • 2 cups cooked brown minute rice
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup diced onion
  • 1 minced garlic clove
  • 1 can 98% Fat Free cream of mushroom soup
  • 3/4 cup shredded mozzarella or cheddar cheese  (I used mozzarella in this recipe)
  • 1/2 cup of light sour cream
  • 1 1/2 cups finely chopped fresh broccoli (frozen will work also)
  • 1 spoonful butter
  • 1/3 cup Panko bread crumbs
  • 1/3 cup shredded parmesan cheese

Directions

  1. Preheat oven to 350°
  2. In a skillet, cook chicken in water. Remove, cool and shred.
  3. Heat oil in skillet and cook onion and garlic for a few minutes until tender.
  4. Add soup, sour cream and cheese. Stir until cheese is melted.
  5. Mix a little less than half a can of water in soup can, add to mixture.
  6. Stir in chicken, rice and broccoli. Add salt & pepper to taste. Transfer to a greased casserole dish.
  7. Combine bread crumbs and parmesan. Melt a spoonful of butter and stir into the bread crumb mixture. Spread on top of casserole.
  8. Bake for 25 minutes, or until hot and bubbly.

Thursday

Pigs in a Blanket

I found this recipe at Tasty Kitchen by Shecancook2. This is basically your typical pigs in a blanket, but with puff pastry. Head over to Tasty Kitchen for the recipe.

Side:  Homemade Sweet Potato Fries

Slice 3 sweet potatoes really thin, toss with 2 table spoons of olive oil, 2 teaspoons of paprika and salt to taste. Bake at 425° for 30 minutes until brown and crispy. Make sure to turn them over so they are crispy all around.

Friday

Mini BBQ Beef Pies

  • 1 lb. Ground Beef
  • 1 small onion diced
  • 1-2 cups of BBQ Sauce (use as much as you like)
  • 1/2 of a large red pepper diced
  • 1/2 cup of chopped sweet potatoes (fresh or canned)
  • 1 ear of corn
  • 2 1/4 cups of Bisquick
  • 2/3 cup of Milk
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 450°
  2. Add beef and onion to skillet and cook until done.
  3. Lower heat to simmer and mix in BBQ sauce, red pepper, sweet potato.
  4. Cut the corn off the ear of corn and add that to the mix.
  5. Mix Bisquick and milk in a bowl.
  6. Drop a spoonful of dough into a muffin tin. Repeat until you’ve used all the dough.
  7. Bake biscuits for about 2 minutes, then take out of oven and add a large spoonful of the meat mixture to each muffin tin on top of the biscuit dough. Press the spoon down making a little cup for the mix.
  8. Sprinkle cheese on top and bake for another 8-10 minutes.

      I am so EXCITED about this menu plan!
      It may sound silly to be “stoked” about kid food, but I know my kids will love everything.

      I’ve been trying to be better at menu planning for the week. I’m usually a “4pm panic planner”, but when I have some sort of a plan, everything goes so much smoother, (surprising, huh?)

      I’m new to your blog, about a week or so. It is wonderful and such a creative resource.

      I think the kids are going to enjoy every day, except for Wednesday, all the other recipes look delicious, this one looks different. Plus there are lots of kids out there who hate broccoli. Hmmm.

      PS: Check the 600+ broccoli recipes I have published. I’m a big fan of broccoli myself.

      Am I missing it? I really liked the printable grocery list on the previous menu. Do you not do those each time? I really, really liked it and found it very helpful!!! =)

      I’ll have to get my wife to try some of these recipes, I think my kids would like it.

      About the printable grocery lists, my wife uses http://www.dinnerbeat.com to autocreate her grocery lists. The site lets her create meal plans quickly from her recipes (it even has an autoplanner) and then print her grocery list which she hands to me since we have two little ones. The best part of the site is that it’s free.
