Easy Summer Recipes – Weekly Meal Plan

We’ve been eating out way too often, so I’ve decided it’s time to start my weekly meal plans again! I may not do one each week, but hopefully a little more often until school starts:-) Hope you enjoy this one. I will add a grocery list soon.

 

Here is what’s for dinner this week…

Minty Fresh Summer Chicken & Rice

MONDAY

Minty Fresh Summer Chicken & Rice

  • 4  Chicken Breasts 
  • 2 cups Sliced Grape Tomatoes
  • 1 Cucumber, Diced
  • ½ Red Onion, Diced
  • 3 tablespoons Balsamic Vinaigrette
  • ½ cups Kalamata Olives, Sliced
  • 3 cups Whole Grain Rice
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon Fresh Mint, In Small Pieces

Directions

  1. Drizzle chicken with olive oil and grill.
  2. While chicken is cooking:
  3. Mix tomatoes, cucumbers, onions and vinaigrette together and chill. Add salt and pepper to taste.
  4. Cook rice and add olives to rice.
  5. Serve chicken with rice and scoop the cold veggies on top of the chicken. Sprinkle with fresh mint.

 

TUESDAY

Black Pepper Tilapia, Veggies & Rice

This is fast & easy night!

Find some frozen or fresh marinated fish at your grocery store. Bake for 10 minutes. Cut up some fresh veggies, add some seasoning salt and pepper and cook in the microwave for a minute. Do the same with rice and you have a nice meal in minutes!

WEDNESDAY

Lemon Pasta

I found this recipe by Ree Drummond (aka The Pioneer Woman) on Tasty Kitchen. It’s super easy and it’s just as good without baking in the oven.

  • 1 pound Thin Spaghetti
  • ¼ cups Salted Butter
  • 1 ounce Olive Oil
  • 1 whole Lemon
  • 2 cloves Garlic
  • 2 cups Sour Cream
  • ½ teaspoons Kosher Salt
  • ⅓ cups Parmesan Cheese

THURSDAY

Barbeque Chicken Soft Tacos

  • 3 Boneless Chicken Breasts (or use leftovers from Monday’s meal)
  • ½ Cup Barbeque Sauce
  • ½ Diced tomatoes
  • ½ Chopped Lettuce
  • 1 Cup Monterey Jack Cheese (optional)
  • 8 Slices of Bacon (optional)
  • Flour Tortillas

Directions

  1. Grill chicken while marinating with bbq sauce. Shred it with a fork and add more BBQ sauce.
  2. Add chicken, bacon, tomatoes, lettuce and cheese in a flour tortilla.

 

FRIDAY

This one isn’t that summery, but it’s a good slow cooker meal. I like to do those on Fridays and have leftovers.

Spicy Turkey Crock-Pot Lasagna

I found this original recipe on Parents.com

  • 1 lb. ground turkey
  • 1 teaspoon dried Italian seasonings
  • 1/2 teaspoon salt
  • 1/4 teaspoon red-pepper flakes
  • 15 oz. container ricotta
  • 1 package of shredded Italian-blend cheese
  • 1 – 10 oz package of frozen chopped spinach, thawed and drained
  • fresh ground pepper
  • 12 lasagna noodles, uncooked and broken in half
  • 1 large jar (26 ounces) chunky pasta sauce (your favorite kind)
  • 1 cup water

Directions

  1. Cook turkey in a pan. Season with Italian seaonings, salt and pepper flakes.
  2. Mix ricotta, cheese blend and spinach in a bowl. Add a few pinches of salt and fresh ground pepper.
  3. In a crock-pot, put a spoonful of pasta sauce to coat the bottom of the pot, then add a layer of the noodles.
  4. Add half the meat mixture over noodles. Pour on half the pasta sauce and half the water. Spread half the cheese mixture on top. Repeat layers.
  5. Cover slow cooker; cook on low heat 4-1/2 hours.

 

Weekend is leftovers!

    You are so good at coming up with these meals, Amy. I love getting a little inspiration for dinners because I feel like I make the same 5 things over and over and over again. Really like the soft taco idea. I think my family would love those. Thanks!
