This recipe comes from my good friend Laura who’s from Louisiana. It’s her Aunt Cookie’s famous recipe! Believe me… this did NOT look appetizing at all the first time Laura served it at a party. (sorry Laura:-) But once I tasted it, I was loving some cajun caviar and had to have the recipe!! Thanks Aunt Cookie for such a yummy and very easy dip.
- 1 jar Chopped Pimientos, Small Jar
- 2 cans Trappey’s Black-Eyed Peas
- 1 bunch Green Onions, Chopped
- 2 Green Bell Peppers, Chopped
- 1 Large Onion, Chopped
- 1 package Good Seasons Zesty Italian Dressing
- 1/4 cup Balsamic Vinegar
- 1/2 cup Vegetable Oil
Directions
- Combine chopped onion, peppers, green onions in large bowl.
- Drain black-eyed peas and pimiento and add to bowl.
- Make dressing according to directions.
- Mix all ingredients and refrigerate.
Best made the day before, serve with Frito Scoops for the best flavor.
- Substitute black-eyed peas with jalapenos for an extra kick!

GIRL~~~you look maaahvelous! I mean it.. oh my gosh, you should be a model! You are stinkin’ gorgeous… and I doubt that one facial could make ThAT much difference!
Anyway…the Cajun Caviar looks so yummy.. I’ll have to try it. I do a salsa/dip with black beans, shoepeg corn, chopped tomatoes, vidalia onion, green pepper (or a can of chopped green chilis for a little more spice), fresh cilantro, fresh lime/lemon juice, chopped garlic.. and sometimes I add sliced olives or chopped avocado, too. It’s just unreal how yummy it is.. I don’t even need a scooper. I can just put some in a bowl and eat it, and I am HAPPY! Oh yum.. I think I’ll have to make that tomorrow….
